FUN FRIDAY // 09

Eight weeks ago, I introduced FUN FRIDAY & the gist is: I chose FUN as my one little word® this year, and I’ve decided that every Friday from now until the start of 2022, I’ll share some fun things that happened the week before.

FLOURLESS. ZUCCHINI. BROWNIES. A few months ago, my awesome-sauce co-teacher made these brownies (recipe from skinnytaste.com) and brought one in for me to try. I had it in my head ever since to make a batch myself. I finally got a chance to do so last week.

The recipe is super simple, and the brownies come out amazingly moist because of the zucchini. …and you can’t even tell there’s zucchini in them! It’s pretty wild. Tom and I had ours with a scoop of vanilla ice cream.

There was plenty more fun from this week, but these brownies are what I’m deciding to highlight. Hey…anyone else never realize their are two c’s in the word ‘zucchini’? No? Just me? Got it. Haa haa!
